Grain free chocolate chunk tahini brownies, wonderful moist squidgy brownies that are nut free too so a nice option for school lunches (which have a nut free policy) Using black tahini gives this brownie a gorgeous dark rich colour and wonderful moistness. Using 70% or higher dark chocolate means it has a relatively high concentration of health-promoting compounds, like polyphenols and antioxidants. Super easy, super delish, give it a whirl, we take indulgences seriously :) xx
Ingredients
2 large, organic eggs
2 tsp. pure vanilla extract
1 cup organic stoneground tahini (a combination of black and brown) nut butter would be awesome too
100g organic coconut sugar
2 tsp. baking soda
¼ tsp Himalayan pink salt
100g dark chocolate (70% or higher), roughly chopped
1 tsp ground cinnamon
1 pinch of cayenne pepper
optional: but delicious - an extra sprinkle of healthy salt on top
Method
1. Preheat oven to 160°C.
2. In a small bowl whisk eggs and vanilla extract together. Set aside. In a measuring cup, combine coconut sugar, pink salt, and baking soda.
3. Measure out the tahini and place in a large bowl. Add the egg mixture, stir thoroughly to combine. Add the coconut sugar mixture and fold together. The dough will be very thick. Add half of the chopped chocolate, to incorporate.
4. Press the batter into a baking dish-lined (20x20cm . Sprinkle the remaining chocolate over the top and press each piece slightly into the batter. Sprinkle with a pinch of salt and place in the oven.
5. Bake for 25-30 minutes until the brownies are crisp and shiny on the top. Remove from the oven and let cool completely before cutting.
