Today in the winter sun, I was poking around my sad looking herb garden for some early signs of spring and found some chamomile that was surviving the cold winter (when its normally dormant). So I was inspired and in-love and in need of a restorative robust, spiced herbal cuppa, that is refined-sugar free, dairy-free with a little bit of herbal health form the sweetest chamomile fairy - to calm, ease stress and restore inner balance.  Drink as much and often as needed xox

Ingredients

  • 5 chamomile teabags (or fresh chamomile blossoms and herbs)
  • 6 slices of fresh root ginger grated
  • 1 cinnamon stick, broken into pieces
  • 2 teaspoons of cardamom pods, crushed
  • 6 black peppercorns
  • 4 whole cloves
  • 1 fresh bay leaf
  • 6 cups of water
  • Honey (to taste)
  • Frothy milk (nut or organic)
  • Nutmeg or cinnamon sprinkle on top
  • Fresh chamomile blossoms to garnish

Method

  1. Gently warm the tea bags, fresh herbs, spices and water in a covered saucepan for 10 - 15 minutes. Do not boil.
  2. Strain the mixture into a warmed teapot and add honey to taste. Pour the chai into a mug and add a generous swirl of frothy milk and sprinkle with cinnamon or nutmeg and edible chamomile blossoms. Ahhhhhh restorative, relaxing, robust flavours that sooth and ease away the day's tensions :)
