Native to the Middle East, but now cultivated all over the world, pomegranate is said to be the fruit of the tree of knowledge in the Garden of Eden. They improve brain function, fertility, great for the heart, slows aging and best of all they taste utterly delicious in so many ways - sweet or savoury! Here we have used them in a refreshing spritzer, add a splash of good quality tequila or gin, and you have got yourself a fabulous festive cocktail
Ingredients
- 1 cup of fresh pomegranate juice (juice from 2 – 3 pomegranate)
- 2 T fresh lime or lemon juice
- 1/3 cup sweetener of your choice, honey, maple or unrefined sugar
- 5cm piece of fresh root ginger thinly sliced
- lime wedges to serve
- pomegranate seeds for garnish, edible flowers, mint, & ice to serve.
Method
- (Optional) Cut the pomegranate in half sideways through the centre. Hold the half firmly over a juicer, as you would an orange or buy using an electrical juicer, seeds, pith, skin (the lot). In seconds all the berries have been broken and the juice drips into the bowl. Strain the juice and there you have it, 100% pure pomegranate juice (or you could buy this from a shop and miss this step)
- Put all the above ingredients in a pot and bring to the boil. Allow this to simmer of a low heat for about 5 minutes. You can bash the ginger around in the pot a bit to bring out more of its flavour. Allow to cool and strain the liquid.
- Add a splash (desired quantity) of the cooled cordial to a glass and top up with soda water or sparkling mineral water. Add tequila if you are in a party mode. Serve with gorgeous garnishes.
