Ingredients
- 1 cup of pumpkin or sunflower seed butter (home-made or store bought)
- 1/2 cup of quality smooth peanut butter (we used Pics)
- Pure maple syrup or raw runny honey to taste (2-3 tablespoons-ish)
- 1 cup of dry roasted sunflower seeds
- 3/4 cup of goji berries
- 1/2 cup of roasted almonds (or any nuts you have to use)
- 1/2 cup of toasted coconut thread
- 1 teaspoon of vanilla paste
- 1 Tablespoon of organic Spirulina powder
- 1 cup of extra virgin coconut oil (melted)
- pinch of Himalayan pink salt (optional)
- 30g Dark Ghana Chocolate, melted and drizzled (optional)
Method
- Melt coconut oil and set aside.
- Toast almonds and sunflower seeds in moderate oven in separate trays.
- In a food processor place toasted almonds and gojis and blitz slightly chunky.
- In a mixing bowl, place seed and nut butters, vanilla, salt, spirulina, coconut oil and thread, then mix though maple syrup and your goji mix and toasted sunflower seeds. Taste and adjust sweetness/saltyness to your liking.
- Line a dish with baking paper and pour in your gorgeous green mixture, smooth over all the edges. Place in the freezer to set.
- Melt your dark Ghana chocolate in a glass bowl over boiling water. Drizzle all over your chilled bar and return to the freezer to set.
- When completely chilled and firm, remove from the freezer and lift out the slice, cut on a chopping board with a sharp knife into about 14 bars....utterly moreish, enjoy :)
