These Mayan Chocolate Truffles are rustic, bitter-sweet and oh so sexy! Bold flavours of cinnamon, chili & orange always reminds us of Mexico. The flavour of these truffles can be only as good as the ingredients you use and this recipe calls for beautifully dark chocolate with an 85% cocoa content, the exquisite addition of spices and orange means that you won't miss the SUGAR one little bit!
Ingredients
- 280g chocolate with 85% cocoa content (chopped coarsely)
- zest of 1 orange or a few drops of 100% pure orange essential oils
- 1 tsp ground cinnamon
- 1/4 tsp chipotle chili powder or smoked paprkia
- 1 vanilla bean- split or 1tsp vanilla paste
- 1 good pinch of Himalayan pink salt
- 1 cup full fat coconut milk
- 1 tbsp organic coconut oil
- cocoa powder or carob or cacao (for dredging truffles)
Method
- Toss chopped chocolate into a mixing bowl with the zest of one orange, cinnamon, chipotle chili powder, vanilla bean and salt.
- Bring coconut milk and coconut oil to a slow simmer in a saucepan over medium heat.
- Pour coconut milk and oil over the spiced chopped chocolate then stir continuously with a wooden spoon until the chocolate is thoroughly melted and the ganache, becomes thick and gorgeously glossy. Taste here and adjust seasoning to your liking.
- Transfer the mixture to a plate or baking dish lined with baking paper and allow it to harden in the fridge for eight hours, or overnight.
- Remove this simplistic dark beauty from the fridge, peel away the baking paper and chop and carve into irregular shaped chunks.
- Toss the chunks with cocoa powder and serve.
