Plum & chocolate clafoutis

Here's the deal: Clafoutis is one of those rustic desserts that's a cross between a custard, a thick pancake, & a flan - it’s neither intricate nor complicated but it’s absolutely irresistible !! A great 'make-ahead' spectacular sweet treat!

Ingredients

  • Coconut oil, butter or ghee, for baking dish or cast iron frypan
  • 6 Black Dorris Plums - or any fruit, cherries would also be wonderful this time of year! cored & sliced, stones removed
  • 1 cup coconut milk 
  • 3 large free range eggs 
  • 1 teaspoon of pure vanilla extract 
  • 75g unrefined sugar (I used coconut sugar) 
  • 50g almond flour (or flour of your choice) 
  • 40g cacao powder or quality cocoa/carob powder
  • ¼ teaspoon of Himalayan pink salt 
  • 1 cup 70% (or higher) dark chocolate cut into chunks or cacao nibs.

Method

  1. Preheat oven to 180 degrees. Grease a 10-inch cast iron fry pan or ceramic dish with butter or coconut oil; set aside. 
  2. Blend coconut milk, eggs & vanilla. Set aside.
  3. Stir together almond flour, cacao powder, coconut sugar & salt. Mix the dry and wet ingredients into a smooth batter. Add chocolate chunks. 
  4. Pour batter into fry pan, top with plum halves. 
  5. Bake until puffed & cooked through about 30-40 minutes. 
  6. Let stand 10-15 minutes. Cut into wedges and serve warm or at room temperature, But this is even better chilled and cut into thin wedges, dollop with probiotic yoghurt or coconut yoghurt...stunning!
