Ingredients

  • 2 cups of almonds (or choice of nuts)

  • 1/4 cup of raw cacao powder or quality cocoa/carob powder

  • 1/2 cup of arrowroot powder

  • 2/3 cup of coconut oil softened (or butter)

  • 1/4 cup of  VERITE Chocolate Ylang Ylang raw sugar body polish OR coconut sugar, honey or maple syrup

  • 1 teaspoon vanilla extract or paste

  • 1/2 teaspoon Himalayan pink salt

  • For the Filling:
  • 225grams of dark chocolate 80% or higher (organic and fair trade is best)

  • 2 tablespoons of VERITE coconut balm OR organic coconut oil
  • 1/4 cup of honey
  • 1 1/2 cups of coconut cream 
  • Pinch of Himalayan pink salt
  • 2 tablespoons brewed coffee or espresso
  • VERITE Oatmeal & Vitamin C 'dust' (totally delish but optional)

Method

  1. Preheat the oven to 200 C.

    Place almonds in a food processor, and process until a coarse flour, add the rest of the ingredients and process until it forms a rough dough. Press down into the greased (silicone) molds and bake for 8-12 minutes or until the top is slightly browned. Take out of the oven and cool. Once the crust is cool, making the filling.

  2. Finely chop the chocolate and place it in a medium size, heatproof bowl. Add the VERITE coconut balm or coconut oil and the sweetener of your choice, mix it into the chopped chocolate a little.

  3. Heat the coconut cream on the stove until very hot. Pour over the chocolate and tap the bowl on the counter to settle the chocolate. Let this sit for about one minute to start melting the chocolate. Using a spatula, slowly stir in a circular motion, starting from the center of the bowl. Stir for about two minutes.

  4. Add the coffee and stir until incorporated. Pour this over the crust and carefully place it in the fridge to set. It will take about an hour to set.

  5. Optional as not gluten free but healing and delicious - Dust with VERITE Oatmeal and Vitamin C dust for extra flavour and nutrition!
