Golden nasturtium pesto

Nasturtium is an edible immune strengthener and is in full swing right now so there are many foraging opportunities, the healing flowers are high in vitamin C and iron and taste peppery, just like the leaves. The plant has yellow, orange and red flowers so you can make your pesto any combination of colours that you want. Mrs Nasturtium has many culinary and medicinal uses. Ingredients

  • 2 cups tightly packed nasturtium flowers (leaves also if u fancy)
  • 2 Tbsp of toasted pine nuts or any nut u fancy
  • 2 cloves garlic
  • pinch of Himalayan pink salt
  • 1/4 cup olive oil
  • 1/3 cup Parmesan cheese

Method

  1. Wash flowers and make sure there are no insects inside them.
  2. Place all ingredients into a food processor or blender and whizz.
  3. Taste and adjust to your liking. We eat ours with some delicious gnocci but you can have it any way you like!
