It's Father's day this weekend, so why not spoil your Dad to a quick, easy and satisfying steak sammy to say THANK YOU for being such a good 'un!! This ultimate open steak sandwich is great anytime of day.... its moreish, spicy and if your dads a fan of a bacon, smoked cheese and steak then this will put a big smile on his face :) Our favourite South American flavour-packed vibrant green Chimichurri with wild Spring greens turns the nutrition and volume up as we are dedicated to great food and wellness!! Packed with flavour, this blokey sammy will defo make the dad in your home a very happy chappy :) a total BOOM SHUCK-ALAKA treat for him!!

Ingredients
- 2 tbsp olive oil, plus extra for brushing
- 1 tbsp finely chopped rosemary leaves
- 2 tsp Dijon mustard
- 1 garlic clove, finely chopped
- 2 Scotch fillet steaks (about 180gm each)
- 2 rashes of free-farmed bacon
- 2 bread slices of your choice (we used sourdough bread/toasted)
- 2 thick slices smoked cheddar or dads fav cheese
- To serve: chimichurri, extra weeds, rocket, herbs sloshed in vinegar & olive oil

Wild Spring Chimichurri
1½ cups coarsely chopped wild greens, such as dandelion, plantain, chickweed, wood sorrel OR flat-leaf parsley, leaves and stems
¼ cup oregano leaves
1 chilli, deseeded, chopped
2 cloves garlic, chopped
1½ tsp ground cumin
⅓ cup extra virgin olive oil
2 tsp ACV (with the mother)
Method
- Preheat a char-grill or heavy fry pan to high. Combine oil, rosemary, mustard and garlic, season to taste, brush over steaks and set aside.
- To make the chimichurri, process wild greens, oregano, chilli, garlic and cumin in a food processor until finely chopped. With motor running, add oil in a thin, steady stream. Process until almost smooth. Stir in vinegar and season to taste. Set aside to let flavours develop.
- Brush both sides of bread slices with extra olive oil, char-grill until toasted (1-2 minutes on each side), keep warm.
- Char-grill bacon and steaks until browned and cooked to your liking (we like medium-rare), transfer to a plate and rest for 2 minutes, then top each steak with smoked cheddar.
- Spread the grilled bread with chimichurri, top with bacon, cheddar and steak then rocket and extra weeds dressed with vinegar and oil. Serve immediately and enjoy :)
