In Arabic, “baba” means father and “ganoush” means spoiled. This “spoiled dad” is a traditional Lebanese dip made with roasted eggplant. In this recipe, we have added chickpeas to give the dip more structure, along with organic stoneground tahini, roasted garlic, lemon, cumin, chilli, pink salt, pepper & glorious green fruity olive oil. Marinated, crumbled, tangy feta tops off this lusciously moreish dip.
Ingredients
- 1 large eggplant, roasted
- 1 cup cooked chickpeas
- 1/4 cup stoneground organic tahini
- 2-3 garlic cloves, roasted with the eggplant
- Zest/juice of 1 lemon
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon Tabasco or chilli
- 1 teaspoon freshly roasted and ground cumin
- 1 teaspoon pink salt, or to taste
- 1 teaspoon freshly ground black pepper
- 1/4 cup chopped Italian parsley leaves
Method
- Blitz all in a food processor or blender, taste and adjust to your liking. Enjoy!
