Chia chilli chutney

This chutney is so spicy and delish, you have to give it a try! A wonderful accompaniment to BBQ meats, cheeses, eggs, and dips.

Ingredients

  • 2 kilos of ripe tomatoes
  • 1 brown onion
  • 1 cup organic coconut sugar
  • 1/4 cup ACV (apple cider vinegar)
  • 1/2 teaspoon of roasted ground coriander seeds,
  • 1 whole red chilli, seeds removed or more if you like it HOT
  • leaves from three sprigs of fresh lemon thyme
  • 4 Tablespoons of chia seeds
  • Himalayan pink salt and freshly ground black pepper.

Method

  1. Chop the tomatoes roughly and dice the onion quite small, combine in a saucepan
  2. Add the sugar, ACV, coriander seeds, chilli, lemon thyme, season with salt and pepper and bring to the boil, then turn down and simmer, let cook for about an hour and a half.
  3. The chutney would have thickened and become more jammy. Turn off the heat and stir in the chia seeds.
