Dried Tomatoes w Pomegranate Splash

  • Recipe serves:1 oven tray will make about 1 jam jar

Harvest  tomatoes as they become ready. Any over-ripe or excess crop can be easily oven dried  and popped into jars and seasoned with olive oil, herbs and garlic to preserve for winter, in this case the volume was turned up by adding a splash of glorious sweet and sour pomegranate molasses to the tomatoes which creates an amazing sharp and vibrant candy-like dried tomato....soooo good!!

Ingredients

  • Tomatoes, any size or variety 
  • Garlic cloves
  • Fresh herbs (tarragon, thyme, rosemary etc)
  • Himalayan pink salt
  • Black pepper
  • Pomegranate molasses
  • Olive oil

Method

  1. Slice the tomatoes in half and place on a oven tray lined with baking paper (for easy clean tomorrow).
  2. Season tomatoes well and drizzle over some pomegranate molasses to kiss them all
  3. Place in a very low oven 50 C overnight to dry out
  4. Bottle them now with fresh herbs and garlic, pack them in quite tight and drizzle over extra olive oil combined with pomegranate molasses to cover. Seal
  5. They will be preserved by the olive oil for winter use :)
