Orange & Goji Marmalady

Abundance of in-season winter oranges means time for Marmalady, because this sticky 'jam' is so sexy and lady-like, packed with vibrant fresh flavours from the most elegant and exotic ingredients and as for that colour...WOWZA - she also packs a nutritional peel power punch!! She is fabulous to smear onto home-made toast, a decadent accompaniment to a cheese board, or turn up the volume on any desserts or amazing sandwiched between a cake...no sinners in sight with this fair lady - just sunshine and all in 20 minutes :) xox

Ingredients

  • 3 whole NZ oranges (organic or from a neighbours tree perhaps)
  • 1 lemon
  • 3 Tbsp of raw honey
  • 3/4 cup of goji berries
  • 3 Tbsp of chia seeds
  • Sea Salt or Pink Salt

Method

  1. Zest the citrus fruit, till you have about a tablespoon of compacted zest
  2. Peel and pith the oranges and lemon, remove any seeds etc
  3. Pulse the citrus fruit in the food processor with honey, zest, salt to taste, until smooth
  4. Add the goji berries and chia seeds to the blended orange mixture and leave them to soften for about 15 minutes.
  5. Pulse the mixture again so that there are some chunky bits remaining or if you like it smooth keep pulsing until you reach your desired consistency.
  6. Eat straight away or it will keep in the fridge for a week or so and freezes well too :)
