Ingredients
- 3 whole NZ oranges (organic or from a neighbours tree perhaps)
- 1 lemon
- 3 Tbsp of raw honey
- 3/4 cup of goji berries
- 3 Tbsp of chia seeds
- Sea Salt or Pink Salt
Method
- Zest the citrus fruit, till you have about a tablespoon of compacted zest
- Peel and pith the oranges and lemon, remove any seeds etc
- Pulse the citrus fruit in the food processor with honey, zest, salt to taste, until smooth
- Add the goji berries and chia seeds to the blended orange mixture and leave them to soften for about 15 minutes.
- Pulse the mixture again so that there are some chunky bits remaining or if you like it smooth keep pulsing until you reach your desired consistency.
- Eat straight away or it will keep in the fridge for a week or so and freezes well too :)
