Nothing could be more Spring-like in your culinary collection than this simple and beautifully diverse dandelion butter. Use to make some sunny shortbread, as a divine spread, baste meats and fish or use to enrich a springtime feast, which wouldn't be complete without our girlfriend dandelion. On a warm sunny day (get the kids involved) simply grab some dandelion leaves, stems, flowers (the lot) and combine with unsalted butter. Butter is like chocolate - a sacred superfood!! In our food budget, we try and focus our expenditures on beautiful nourishing heart-healthy foods like organic grass fed butter! Don't have a fat phobia with butter any longer, but choose quality butter from farms that are accountable for their practices. Ingredients
- Dandelion leaves, flowers, stems, picked on a warm sunny day and washed carefully to remove any dirt etc
- Unsalted Grass fed butter, softened - there are some great brands out there such as Lewis Road, Green Valley and Organic Times :)
- Pinch of Himalayan pink salt (optional)
Method

Beat all ingredients together with a fork until light and fluffy. Keep some petals back to garnish and sprinkle on the butter.

Either roll into balls or place on plastic wrap and roll into a log to cut round disks. Easy Peasy :)
