Festive Fudge

Caution! This highly addictive wholefood fudge is outrageously good with fabulous festive flavours.  Why not double it, as it would make a fabulous edible gift for friends and family this silly season :)  This fudge is gluten free, dairy free, refined sugar free and made fiercely healthy with seven simple and nourishing ingredients! Best of all its super easy to make, simply melt and stir, pour into a tray and place in the fridge or freezer = EPIC result :)


  • 100g organic extra virgin coconut oil
  • 120g dark chocolate, broken up (we used 85%, fair trade and organic)
  • 5Tbsp cashew and date butter (simple recipe below) (or any nut butter)
  • Himalayan pink salt to taste
  • 120g dried sour cherries or fresh stoned and chopped (or dried fruit of choice) 
  • 100g roasted hazelnuts, roughly chopped (or any nuts you have)
  • sprinkling of freeze dried plums or raspberries
  • Cashew and Date Butter
  • 2 cups cashews, roasted
  • 6 fresh medjool dates, pitted
  • 1/4 cup of raw manuka honey


  1. Firstly make this simple Cashew and Date Butter. Roast the cashews in a 180C oven until golden, while they are warm place them into a food processor and add the dates. Blitz for a minute and scrape down the bowl, slowly drizzle in the honey and you may need a splash of hot water to get a gorgeous buttery paste.
  2. Lightly roast the hazelnuts  in a 180°C oven for approximately 10 minutes or until lightly brown.  Place the nuts into a clean tea towel and gently rub off the skins.

  3. Place coconut oil, dark chocolate, cashew/date butter and  pink salt in a small pan and stir over low heat until melted. Add the chopped hazelnuts and sour cherries and stir to combine. Pour the fudge into a lined  20cm x 20cm tin, scatter over the freeze dried plums and place into the freezer to set. Once firm, remove from the tin and cut into squares.
