These super easy and utterly delicious medicinal gummies are a great snack to have on hand especially in the Winter, packed with vitamin C using beautiful sharp in-season NZ oranges (from a neighbours laden tree perhaps). Echinacea tincture extract provides an immune boost along with antibiotic and anti-fungal activity, great for sore throats and infections! Grass-fed pure beef gelatin also provides a good source of protein and marvellous medicinal manuka honey is a wonderful healing sweetener, which adds extra benefits to these divine home-made lollies :) Keep it natural...keep it real...food as medicine xox
Ingredients
- 250 mls fruit juice (freshly squeezed N.Z oranges) (or any fruit or veg juice you like)
- 3-4 Tablespoons raw manuka honey (to taste)
- 4 Tablespoons of grass-fed beef powdered gelatin
- Echinacea tincture or probiotic powder (optional for added benefits) available from a health shop or herbal dispencary
Method
- Place fresh juice in a saucepan, sprinkle over gelatine. Let stand for 5 minutes.
- Gently heat for 5 minutes until smooth and dissolved, don't boil the mixture!!
- Now add your manuka honey and any other goodies you choose (such as the echinacea tincture or perhaps probiotic powder, superfood berry powders etc) and stir to combine.
- Pour into ice-cube trays or chocolate moulds immediately place in the freezer to set (about 10-15 minutes)
- Once gummies are set, remove from moulds and store in an airtight jar either in the fridge or they are ok at room temperature for a few weeks (if they last that long) :)
