A refreshing, anytime of da,y 5 minute recipe. Fresh, pukka pineapple with mint & lime leaf sugar. Stunningly simple and kids will love this one too - If you have any leftovers, you could always make a pina-colada!
Ingredients
- 1 ripe pineappleĀ
- 2 tablespoons organic coconut sugarĀ
- 1 handful fresh mint leaves
- 2 kaffir lime leaves - stems removed, roughly chopped
Method
- Grab a pestle & mortar with the coconut sugar in it. Add the fresh picked mint leaves & lime leaves and add them to the sugar. Bash the hell out of it in the pestle and mortar. You'll see the sugar change colour and it will smell friggen fantastic. It normally takes about a minute to do if you've got a good wrist action.
- Sprinkle the mint and lime sugar over the plate of pineapple, add a squeeze of fresh lime juice if your pineapple is really sweet to give it vibrancy, if you wish, serve with natural yoghurt or add some pomegranate seeds for a pop of colour & extra spunk. This would also be lovely served next to a curry or left-over ham or seafood with some chilli.
