Roasted fairtrade banana paletas

These are a doddle to whip up & super nutritious. Kids LOVE them! Choosing Fairtrade bananas has a direct & positive impact on the lives of producers, workers & their communities. Roasting heightens their sweetness and gives them more complex flavours - you could add a splash of rum to this for a boozy adult frozen treat on a hot afternoon.

Ingredients

  • 4 ripe fairtrade bananas
  • 1/4 cup organic coconut sugar
  • 1 cup whole milk (or nut milk, or coconut milk, or whatever milk you like)
  • 1/2 cup probiotic yoghurt (or Cocoyo yoghurt)
  • 1 teaspoon pure vanilla extract 
  • Juice of a lemon (from yours or a neighbours tree)
  • 1 teaspoon of ground cinnamon
  • 1 pinch of Himalayan pink salt

Method

  1. Preheat oven to 200 C.
  2. Wrap bananas (with skins on) in foil individually and roast for about 30 minutes. Let cool enough so you can handle them.
  3. Place the flesh in a bowl and mash with a fork, add the coconut sugar, until dissolved, add milk and yoghurt, vanilla, lemon juice, cinnamon & salt (rum for adult ones).
  4. Blend again and spoon into molds and freeze until solid about 2-3 hours - don't forget to add your twigs or wooden sticks half way through the process!
