These are a doddle to whip up & super nutritious. Kids LOVE them! Choosing Fairtrade bananas has a direct & positive impact on the lives of producers, workers & their communities. Roasting heightens their sweetness and gives them more complex flavours - you could add a splash of rum to this for a boozy adult frozen treat on a hot afternoon.
Ingredients
- 4 ripe fairtrade bananas
- 1/4 cup organic coconut sugar
- 1 cup whole milk (or nut milk, or coconut milk, or whatever milk you like)
- 1/2 cup probiotic yoghurt (or Cocoyo yoghurt)
- 1 teaspoon pure vanilla extract
- Juice of a lemon (from yours or a neighbours tree)
- 1 teaspoon of ground cinnamon
- 1 pinch of Himalayan pink salt
Method
- Preheat oven to 200 C.
- Wrap bananas (with skins on) in foil individually and roast for about 30 minutes. Let cool enough so you can handle them.
- Place the flesh in a bowl and mash with a fork, add the coconut sugar, until dissolved, add milk and yoghurt, vanilla, lemon juice, cinnamon & salt (rum for adult ones).
- Blend again and spoon into molds and freeze until solid about 2-3 hours - don't forget to add your twigs or wooden sticks half way through the process!
