Healthy fats are all the rage in the low-carb community, but sometimes it can be hard to find a satiating snack with a high percentage of good quality fat which curbs hunger and also satisfies the sweet tooth when we are busy people on the run!
The solution is to make a FAT BOMB in a convenient bite-sized package and snack on that when your having cravings or an afternoon slump!! As always, fat bombs are not meant to be overeaten but they are great energy giving snacks, delicious and keep you more sustained and happier :)
You can make fat bombs with a number of different good quality fats and get really creative with flavours such as...peppermint, ginger, nutmeg, cinnamon, cacao, vanilla, chilli and dark chocolate !! This zippy zesty fat bomb contains coconut butter which is basically shredded coconut meat blended into "butter" or you could use chilled coconut cream - if that's easier, ENJOY xox
Ingredients
- 200g coconut butter, softened or you can use chilled coconut cream
- ¼ cup organic extra virgin coconut oil, softened
- fresh lime and lemon zest from 1 juicy lemon and 2 limes (from a neighbours tree)
- Sweetener of your choice, either stevia, raw honey or pure maple (to taste)
- Pinch of Himalayan pink salt (optional)
Method
- Finely zest the lemon and limes and make sure the coconut butter and coconut oil are softened at room temperature.
- Mix and whip all the ingredients in a bowl and make sure the zest and sweetener are distributed evenly.
- Taste - and adjust (you want them to be quite zesty because the flavour 'mutes' once they are chilled)
- Fill each silicone 'chocolate' mold or mini paper cups with about 1 tablespoon of the coconut mixture and place on a tray that will fit in the fridge or freezer
- Place in the fridge for 30-60 minutes or until solid
- Keep refrigerated as coconut oil and coconut butter get soft at room temperature. Enjoy these healthy fatties ;) xox
